Eating Bright: About Me

Throughout the years, I have read countless many blogs that have enacted to inspire and enthrall me. I've always wanted to create my own but alas life as they say got in the way. Which is why as of today, I have created Eating Bright. The purpose of this particular blog is to document my progress as I struggle through an overabundant amount of health opinions. Just for fun though I'm throwing in the fact that I just graduated moved four hours away from my parents and will be attending University come this September. So whether you're interested in recipes, organization or just feel like laughing at me, I introduce to you my blog, and all its unedited glory.

What is this blog going to be predominantly about?

Well, in essence, I love getting creative in the kitchen (err by creative I of course mean following the beautiful wonderful recipes that other people have created and subsequently butchering it in hopes of furthering my culinary skills) and intend to post recipes as I try them and then modify them to try to make them " healthier" by which I mean, reducing the amount of refined sugar, and other lovely processed ingredients.

Furthermore, I've managed to rope my wonderful fiancĂ©e into training for a 10k run with me (Mahwah), and I'll intend to post and beg for running tips/tricks, and of course, our training schedule.  Snippets of his suffering are an added bonus

The extended theme of the blog though I would like to say is finding healthy, and thus to tie it all together expect posts about how to maintain sanity and overall balance in a hectic lifestyle.

Now about me. I'm 17 years old, engaged. I'm moved out and live in the middle of a beautiful orchard, with lots of scenic running routes, which feature loving evil death defying hills which I shall  contend with over the next few months. I'm a healthy weight, but I wouldn't say that I'm healthy per se (need I mention my severe aversion to veggies?). I've got the exercise thing down pat, but the food part needs a bit of work.

So that's about it, I suppose. Hope to be seeing and meeting lots of you lovely bloggers (and non bloggers) who frequent the blogosphere.
